Title: Tabbouli Salad

Yield: 6 Servings

1cBulgur wheat, uncooked
2cBoiling water
1/3cVegetable oil
1/3cLemon juice
2tsSalt
1tsPepper
1/2cParsley, chopped
3tbMint, fresh chopped or,
2tsMint, dry crumbled
6 Green onions & tops, minced
2 Tomatoes, chopped

Pour boiling water over wheat in a bowl. Let stand one hour. Drain well and return to bowl. Add remaining ingredients and blend well. Chill at least two hours. Serve on a bed of lettuce.
